Discovered in an exclusive Right Bank Paris wine bar, Serge Mathieu's Champagne is a revelation and is what really good champagne is all about. We thought when we first tasted it that it was a vintage Grande Marque Champagne. 2 stars in the Hachette Wine Guide—in our opinion it should be 3. This is a single grower Champagne made from Serge Mathieu's own grapes, and not bought in from scores of growers as the bigger brands are. The new edition of Hugh Johnson's Pocket Wine Book lists it as "an outstanding eco-friendly" Champagne to watch in 2007. The price is unbeatable—highly recommended.

Our tasting notes
The colour is golden hue with a crisp, honey-scented nose. The bubbles are small and concentrated and the wine exceptionally well balanced with just the right amount of acidity. Rich and creamy with an excellent finish. A Champagne to drink rather than taste. Exceptional.

About Champagne
Good Champagne is the most delicious and exhilarating of all aperitifs. Made from the black Pinot Noir, Pinot Meunier or Chardonnay grapes and sometimes from as many 200 communes for the bigger brands, the wines must be aged in the bottle for a minimum of 15 months in the deep chalk cellars in and around Epernay and Reims. While 90% of Champagne consumed in the UK is from the big brand Champagne houses, this is not the case in France which drinks 2/3 of the region's production and where the brands are nothing like as dominant.
